Olive Oil, Orange and Chia Cake
This cake is deliciously dense, zesty and fresh, and best of all, takes hardly anytime to prepare and doesn't need a beater or stand mixer! You simply whisk up all the ingredients, put it in the oven and forget about it for the hour. It rises beautifully and pairs perfectly with a nice cup of coffee.
Olive Oil, Orange and Chia Cake
CAKE
3/4 cup olive oil
Zest and juice of 1 orange
1 cup greek yoghurt
2 eggs
1 1/4 cup sugar
2 cups self raising flour
1 tbs chia seeds
ICING
1 tbs chia seeds
1 cup icing sugar
1 tbs water
Preheat fan forced oven to 160C and grease and line a medium sized cake tin. Combine all the wet ingredients and the sugar with a whisk until smooth and glossy. Whisk in the self raising flour until there's no lumps in the batter and stir through the chia seeds. Pour the batter into the prepared tin and bake for 55 minutes to 1 hour, or until the top is golden and springy to the touch. Allow the cake to cool completely. Mix together the chia seeds and water and allow the chia seeds to expand in the water for 5 minutes. Whisk in the icing sugar and drizzle over the cake.
